Bean Sprouts are the sprouted seeds of assorted bean plants with the most common being mung bean sprouts and soybean sprouts.
Chinese roots go back thousands of years:
More than 5,000 years ago, Chinese physicians recognized and prescribed sprouts as a cure for a variety of illnesses.
It is likely that bean sprouts were part of their medicinal practices at this time.
Origins of Mung Beans:
Domestication of the mung bean is believed to have begun in 1500 BC on the Indian subcontinent.
Mung beans were introduced to southern and eastern Asia, Africa, Austronesia, the Americas, and the West Indies.
Introduction to the United States:
Around 1830, bean sprouts were first grown in the United States.
They were originally called "Chickasaw peas".
In time, they gained popularity and became a common ingredient in many dishes.
Bean and other sprouts were used in conjunction with lemons and limes to fight scurvy among crews of 1700's sailing ships.
