Korean Picnic, Street, and Snack Food Recipes: Gyeran Ppang

This street food was not available when I was stationed in Korea, so I missed it's advent. 
I didn't know anything about it until a few of our younger (18 and under)
K-pop/K-Drama fans (and some older [60 +] ones ❤️) started asking if we could do Korean Egg Bread. In my mind I was picturing something similar to french toast with the center cut out and an egg cracked in. So of course I went to Google and found not only "Egg Bread" but quite a large variety of options - ham, bacon, sausage, onions, green onions, with syrup, with dips, mayo, ketchup, tomato, cheese, and more.
I finally got around to trying my hand at it and it turned out very well. It is basically somewhere between a lightly sweet pancake or muffin batter with some savory additions like minced onion, pepper, or minced garlic.

Makes 2 small loaves
Recipe Type: Appetizer, Korean, Snack, Street Food


Equipment:
2 mini loaf pans (5.75 L by 3 inches W by 3 inches D)
Air Fryer

Ingredients

Batter:
3/4 cup loose flour (use a fork to "fluff" the flour before measuring)
3 tablespoons rice flour (May be omitted if you want a softer crust)
1 teaspoon baking powder
3 teaspoons sugar (more for a sweeter taste)
1/4 teaspoon salt (omit or use less if using salted butter)
3/4 cup milk or water
2 tablespoons butter, melted (salted or unsalted)
1 teaspoon vanilla
1 large egg

In this recipe I also used dehydrated chopped onion, pepper, and crumbled parmesan cheese.

Add-ins:
1/2 cup shredded mozzarella (or your favorite cheese)
1 or 2 slices deli sliced ham
2 eggs


Directions
Pre-heat air fryer to 325° F.
Lightly oil or butter the baking pans.

Batter
Mix dry ingredients together and fluff with a fork.
Mix wet ingredients and egg together.
Combine wet and dry together in a medium bowl with minimum stirring, just enough for a good mix.

Cut the ham into pieces smaller than the width and length of the pans.

Pour or spoon some of the batter into the pans, slightly more than 1/4 full.
Lay the ham in the center away from the edges.
Sprinkle shredded cheese on the ham, reserving a small amount.
Crack 1 egg onto the center of the ham & cheese in each pan.
Pour batter on top of the additions until about 3/4 full in each pan.
Place the pan(s) into the air fryer and cook at 325° F for about 6 minutes, sprinkle the remaining cheese on top, reduce heat to 250° F and cook for another 15 minutes or until cheese on top is golden brown. 
Use toothpick test to see if done (tooth pick comes out of loaf clean) and cook a bit longer if needed.
Remove from air fryer and cool until you can handle it. Slice and serve warm.

Options/Variations
Use crumbled sausage or bacon crumbles instead of, or in addition to ham. Mix the bacon or sausage into the batter.
Add chopped chives, onion , or green onion. Either mix into the batter or sprinkle with shredded cheese on top of the loaf.
