Ueong - Korean Burdock Root

In Korea and other Asian countries, Ueong root, or burdock root, is very popular. It has a mild, earthy flavor and is suitable for beverages, banchan dishes, braises, soups, and stir fries. Burdock root is a root vegetable, often called "U-eong" in Korean, and is loaded with nutrients and fiber. It's known to have antioxidants that help with inflammation. It's also known to aid digestion and gut health. Burdock root has a chewy, nutty taste.
