Silken Tofu (Soondubu):
Texture: Soondubu is exceptionally soft and smooth, almost custard-like. It’s not pressed or strained, resulting in a high water content and an extra silky, velvety texture.
Shape: You can find soondubu in various shapes, including rectangular containers or cylinder tubes.
Versatility: Soondubu is versatile and can be used in both savory and sweet dishes, although it is mostly used in soup dishes.
Some uses:
Soondubu Jjigae: Made with kimchi, pork, green onion, and garlic.
Kimchi Soondubu Jjigae: Made with ripe kimchi and thinly sliced meat.
Haemul Sundubu Jjigae (Seafood Soft Tofu Stew): Includes various seafood.
Deulkkae Sundubu Jjigae (Soft Tofu Stew with Perilla Seeds): A mild version with perilla seeds.
Sundubu Ramyun: Combines soondubu with instant ramen noodles.
