Acorn noodles come in two varieties: flour-based soba and starch-based vermicelli. This is information about flour-based soba.
Approximately the same diameter as grocery store spaghetti, dotori guksu are made from acorn flour and a combination of grain-based flours.
Dotori guksu, a soup of the same name, and Bibim Guksu, a cold noodle dish, are the most popular uses for this noodle.
