Korean malt powder, also known as barley malt powder (엿기름가루), is an essential ingredient in Korean cuisine. It has a sweet, malty flavor and plays a crucial role in traditional dishes such as gochujang (chili paste) and sikhye (rice punch). The enzyme amylase in barley malt powder converts the starch in rice into sugar when mixed with warm water.
