Pork ribs are used in various Korean dishes from braises to grill.

Uses
:
Rib pieces: Soups, stews, and braises.
Whole ribs/rib sections: Grill

Shopping:
Depending on the specific use, you can find pork ribs in whole racks, partial racks, or in pieces. Many groceries will now offer riblets, or "sweet and sour cut" rib pieces. Choose ribs that have a fair mix of fat and meat.

Prepare for Use:
For most Korean cooking uses rinse the ribs under cold running water to remove any debris. Place in a pot of water and soak for about an hour and rinse again. Cover the ribs with water, add some fresh ginger pieces, and bring to a rapid boil. Remove from heat, drain, and rinse one more time in cold water.
