Chayote - Edible Gourd

The edible plant chayote is also known as christophine, mirliton, and choko. It has a mild flavor that is similar to that of apples and cucumbers, but with a refreshing crispness. Chayote is a wonderful addition to jangajji (Vegetable pickles in a soy sauce brine). It can also be used instead of cucumber in several banchan dishes, or as a quick pickle dish in sweetened or seasoned vinegar.
