Try using different meats like pepperoni, bacon, sausage, ham, franks, pork belly, bison, goat, game meats, etc. Spam and pineapple work really well. Mushrooms, fried tofu, tempeh all work instead of meat.

Chopped onions, green onions, chives, shallots, garlic, bean sprouts, red or green chili peppers, chopped bell peppers, corn, green beans, peas, and more can be used.

Fruit like fried apple pieces, pineapple, Korean pear, or other similar fruits can add a bit of sweetness to the fried rice.

Try rolling it in an egg sheet.
