This type of leafy radish is cultivated in Korea for the greens it produces. Its taproots and greens are harvested while they are still soft and tender. Unlike mature white radishes or chonggak mu (young radish), which has tough top leafy parts, it has tender, long greens and a thin, small root. [1]
The young summer radish, or yeolmu, is a type of radish that is grown in Korea. It has long, tender greens and a thin, tiny root. It is not the top leafy part of the Korean white and green radish (조선무, Joseon-mu), or chonggak mu (young radish), which are tougher. Yeolmu is harvested when its taproot and greens are still tender.
The radish greens are commonly used in Korean cuisine, especially to make Yeolmu-kimchi. The radish greens can be used alone or combined with young napa cabbage to give the kimchi a different texture and flavor. [2]
