민들레 Minduelle | Dandelion
Minduelle is dandelion greens that are harvested and either used fresh, dried, or parboiled.
Dandelion greens come from the Taraxacum genus of flowering plants in the Asteraceae family. These greens are commonly found in Eurasia and North America. Both the common dandelion (T. officinale) and the red-seeded dandelion (T. erythrospermum) are edible. The leaves are rich in nutrients, including folate, calcium, potassium, and vitamins A, C, and K—making them even more nutritious than kale and spinach!
Some Uses:
Mindeulle Muchim (민들레 무침): Fresh dandelion greens are tossed with a soy-based dressing to make this Korean dandelion greens salad.
Mindeulle Namul (민들레 나물): This side dish combines blanched dandelion greens with seasoning ingredients.
Mindeulle Kimchi (민들레 김치): Dandelion greens can even be part of kimchi, a traditional Korean side dish made of salted and fermented vegetables, including—you guessed it—dandelion greens.
