Adzuki bean
Adzuki 팥 (pat)
Chinese, Japanese, and Korean cooking use azuki, or adzuki, beans because of their sweet flavor and soft texture. In addition to accompanying savory rice dishes, they can also be boiled, mashed, and sweetened to make red bean paste, which is used in desserts, such as puddings and pastries, as well as shaved ice.
At New Year's, red beans are said to bring good luck and ward off evil spirits.
To prepare dried beans, soak overnight,
bring to a boil and simmer 1-1/2 to 2 hours. Store dried beans in an
airtight container for up to 1 year.
