Incorporating elements and techniques from different culinary traditions can produce incredibly tasty dishes. For example, incorporating Kimchi, a staple of Korean cuisine, into an American-style beef patty mix elevates the flavor to new heights.
This recipe is another result of allowing me to play in the kitchen. I had a craving for grilled burgers, but not the usual kind. I was thinking more along the lines of those delicious Korean street burgers I had during my time in Korea. As I searched through the kitchen and fridge, I was pleased to find some fresh kimchi. With a little bit of dicing, chopping, and mixing, I managed to create a burger that closely resembled the one from my memory.

1/4 cup kimchi
1/2 teaspoon salt
1/2 teaspoon pepper
